Thanksgiving Planning

Greetings, all, and Happy Two Weeks Until Thanksgiving!

Hubby and I are big foodies and love to experiment in the kitchen (we usually host my parents for Thanksgiving dinner or the day after), so this being our first year doing a keto menu will be interesting, to say the least.

Stuffing/dressing and sweet potato casserole are two of my most favorite dishes, so I'm trying to come up with some gourmet keto hacks that will ensure I don't feel I'm missing out!

Starters

I was planning to make Aperol spritzes, but of course Aperol is loaded with sugar...grr!  I still might make mini versions - they look so festive and I've been craving one!

We'll probably offer wine and serve a charcuterie board while everything is getting finished.

Main Course

We spatchcock and dry-brine our turkey a couple days prior to the main event, so that'll be taken care of.

We typically roast it in the oven over a tray of veggies to add to the stuffing, so maybe this year I'll use cauliflower to later mash into something like this cauliflower mash from Keto Connect or this mashed cauliflower bake from Joy Filled Eats.  Or this Mushroom, Bacon, and Cauliflower casserole from Do You Even Paleo? looks like it would be a nice keto-alternative to traditional stuffing!

Dessert

I'm a pumpkin fiend and will definitely miss Mom's pumpkin cheesecake this year, but either this Keto Pumpkin Cheesecake from Hey Keto Mama or this Pumpkin Coffee Cake from Divalicious Recipes look like a good swap!
